USES/FORMS/SOURCES
It is a GRAS (Generally Recognized as Safe) food additive (Clayton & Clayton, 1982) and is used in soft drinks, baked goods, and candies. It is also used in tanning, pharmaceuticals, and coloring metals, for silvering mirrors, in the treatment of wine (Clayton & Clayton, 1982), in barrier creams (Romaguera et al, 1985), and in skin cleaners (Bondarenko, 1979).

ACUTE CLINICAL EFFECTS
- As it is a relatively strong acid, tartaric acid can be a skin, eye, and respiratory tract irritant, depending on the concentration and exposure conditions (Clayton & Clayton, 1982). It would be predicted to cause esophageal or gastrointestinal tract irritation or (less likely) burns if highly concentrated tartaric acid is ingested.
- Rats tolerated oral doses of up to 1.2% (Fitzhugh & Nelson, 1947); however, when injected intravenously in rats and rabbits it caused kidney damage by precipitating in the renal tubules (Clayton & Clayton, 1982).
CHRONIC CLINICAL EFFECTS
- Workers chronically exposed to tartaric acid developed skin ulcerations, gastric ulcers, gastrointestinal hyperacidity, and symptoms similar to those of metal fume fever (Barsotti, 1954). Metal fume fever is a flu-like condition with fever, chills, sweats, nausea, vomiting, muscle aches and pains, and weakness. The symptoms generally appear within a few hours after exposure and subside within 24 to 48 hours, leaving no permanent effects.
- In one occupational study, workers chronically exposed to tartaric acid had a higher prevalence of lesions of the mouth and skin (Moscato, 1983).
